Preheat oil in a heavy-bottomed pot or Dutch oven to 350°F (175°C) for frying.

Slice the onions into 1/4-inch rings and separate the rings. Pat dry with paper towels to remove excess moisture.

In a large shallow dish, whisk together flour, cornstarch, baking powder, salt, black pepper, paprika, garlic powder, and onion powder until evenly combined.

Place breadcrumbs or panko in a third shallow dish.

Dredge each onion ring in the flour mixture, coating completely. Shake off excess.

Roll the ring in breadcrumbs until fully coated; place on a wire rack.

Repeat for all rings. Fry in batches: gently place rings into hot oil and fry 2–3 minutes per batch until golden brown and crisp.
