Roasting Corn
If using fresh corn, preheat the oven to 400°F (200°C). Place corn on a baking sheet and roast for 20-25 minutes until lightly charred. If using canned or frozen corn, skip this step.

Chopping Cilantro
Wash the cilantro thoroughly, remove the stems, and chop the leaves finely.
Assembling the Quesadilla

Layering Ingredients
On one half of each tortilla, spread 1/4 cup of refried beans evenly. Top with 1/4 cup roasted corn, 2 tablespoons chopped cilantro, and 1/2 cup combined Monterey Jack and cheddar cheese.

Folding the Tortilla
Fold the tortilla over to cover the filling, creating a half-moon shape.
Cooking the Quesadilla

Heating the Pan
In a large skillet, heat 1 tablespoon of olive oil over medium heat. If desired, season with salt and black pepper.

Cooking Each Quesadilla
Carefully place the folded quesadilla in the skillet. Cook for about 3-4 minutes on each side or until golden brown and the cheese is melted. Repeat for remaining quesadillas, adding more oil as necessary.
