Steak Preparation

    Season the Steak

    Sprinkle the flat iron steak with salt and black pepper evenly on both sides.

    Sear the Steak

    In a skillet over medium-high heat, add olive oil. Once hot, place the steak in the skillet and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness is achieved. Remove from skillet and let rest for 5 minutes before slicing.

Red Wine Demi-glace Preparation

    Sauté Shallots

    In a saucepan, melt 1 tablespoon of butter over medium heat. Add finely chopped shallots and cook until softened, about 2-3 minutes.

    Add Wine and Reduce

    Pour in the red wine and bring to a simmer. Let it reduce by half, about 5-7 minutes.

    Add Beef Stock and Simmer

    Add beef stock and thyme to the saucepan. Simmer for another 15-20 minutes until it thickens. Season with salt and black pepper to taste.

    Finish the Sauce

    Remove from heat and whisk in the remaining tablespoon of butter until smooth.

Crispy Onions Preparation

    Slice the Onion

    Thinly slice the large onion into rings.

    Soak in Buttermilk

    Place the sliced onions in a bowl and cover with buttermilk. Let them soak for at least 30 minutes.

    Dredge in Flour

    In a separate bowl, coat the soaked onion rings in flour until fully covered.

    Fry the Onions

    In a deep skillet, heat vegetable oil over medium-high heat. Fry the onion rings in batches until golden brown and crispy, about 2-3 minutes. Remove and drain on paper towels.
