Preparation of Rice

Cook the Brown Rice
Rinse 1 cup of brown rice under cold water. Combine the rice with 2 cups of water in a pot and bring to a boil. Once boiling, reduce heat to low, cover, and let simmer for 40-45 minutes or until the rice is tender and all water is absorbed. Remove from heat and let sit covered for 10 minutes.

Prepare the Tuna
Dice the sushi grade yellowtail tuna into bite-sized cubes and set aside in the refrigerator until ready to assemble the bowl.
Prepare Dressing

Make the Poke Dressing
In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey, and sesame seeds. Adjust the seasoning to taste.
Assemble the Bowl

Assemble the Tuna Poke Bowl
In a serving bowl, layer the cooked brown rice as the base. Top with arugula, kale, sliced avocado, radishes, carrots, cucumbers, and diced yellowtail tuna. Drizzle with the poke dressing and add a dollop of wasabi on the side. Serve immediately.
