Wine Making Process

1. Harvesting the Grapes

Begin by harvesting ripe Pinot Noir grapes. Ensure that they are picked early in the morning to avoid heat stress and maintain their freshness.

2. Crushing the Grapes

Once harvested, crush the grapes to release the juice. You can do this by hand or using a grape crusher. The juice, skins, and seeds will all mix together in this process.

3. Fermentation

Transfer the crushed grapes (must) into a fermentation vessel. Add 500 ml of water and sprinkle the wine yeast over the top. Allow the mixture to sit for 24 hours to start the fermentation process.

4. Adding Sugar and Tannin

After 24 hours, add 50 grams of sugar and 1 gram of tannin (if using) to the mixture. Stir gently to incorporate the sugar and tannin into the must.

5. Primary Fermentation

Cover the fermentation vessel with a lid or cloth, allowing gases to escape. Let the mixture ferment for about 7-10 days, stirring daily. You will notice bubbling, which indicates active fermentation.

6. Pressing the Wine

Once fermentation is complete, press the mixture to separate the liquid from the solids. Use a wine press or a simple strainer to extract as much juice as possible.

7. Racking

Transfer the pressed wine to a clean fermentation vessel, leaving sediment behind. This process is called racking and helps clarify the wine.

8. Aging

If desired, add sulfites to the wine for preservation. Age the wine in a cool, dark place for at least 6 months to develop flavors.

9. Bottling

Once the aging process is complete, bottle the wine using sterilized bottles and corks. Make sure to label your bottles appropriately.

10. Enjoying

Allow the wine to rest for a few weeks before serving. Enjoy your homemade Cloudline Pinot Noir with a meal or on its own!
