Method
Cooking the Seared Salmon

Prepare the Salmon
Pat the salmon fillets dry with paper towels. Season both sides with salt and black pepper.

Heat the Olive Oil
In a large skillet, heat the olive oil over medium-high heat until shimmering.

Making the Creamy Mashed Potatoes

Mash the Potatoes
Drain the potatoes and return to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.
Preparing the Brussels Sprouts

Trim and Halve the Brussels Sprouts
Trim the ends of the brussels sprouts and cut them in half.

Roast the Brussels Sprouts
In a bowl, toss the brussels sprouts with olive oil, salt, and black pepper. Spread on a baking sheet and roast in a preheated oven at 400°F (200°C) for 20-25 minutes until golden brown.
Toasting the Almonds

Toast the Almonds
In a dry skillet over medium heat, add the sliced almonds. Toast for about 5 minutes, stirring frequently, until they are golden brown and fragrant. Remove from heat.
Making the White Wine Butter Sauce

Prepare the Sauce
In the same skillet used for the salmon, add the white wine and bring to a simmer over medium heat. Let it reduce by half.
