Prepare the Glass
Chill a cocktail glass by filling it with ice water while you prepare the drink.

Mix the Ingredients
In a cocktail shaker, combine the gin, white peach purée, and fresh lime juice. Fill the shaker with ice cubes.

Shake Well
Secure the shaker lid and shake vigorously for about 15 seconds until well chilled.

Strain the Mixture
Remove the ice water from the cocktail glass and strain the mixture from the shaker into the glass.

Top with Cava
Gently pour the cava over the gin mixture in the glass.

Garnish the cocktail with fresh mint leaves and a lime wedge on the rim of the glass.
