Chicken Marinade

Marinate the Chicken
In a bowl, combine the buttermilk, hot sauce, salt, and black pepper. Add the chicken breasts, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours, or overnight for best results.

Prepare the Spice Mix
In a small bowl, mix together the paprika, garlic powder, onion powder, cayenne pepper, and dried thyme. Set aside.
Breading

Prepare the Breading
In a shallow dish, combine the flour, cornstarch, and baking powder. Mix well to ensure even distribution.

Coat the Chicken
Remove the marinated chicken from the refrigerator. Dredge each piece in the breading mixture, pressing firmly to adhere. Shake off excess flour.
Nashville Sauce

Make the Nashville Sauce
In a small saucepan, combine the cayenne pepper, brown sugar, paprika, vegetable oil, white vinegar, and salt. Heat over medium heat until the sugar dissolves, stirring constantly. Remove from heat and set aside.
Scallion Aioli

Prepare the Scallion Aioli
In a bowl, mix the mayonnaise, finely chopped scallions, and lemon juice until smooth. Refrigerate until ready to use.
Frying the Chicken

Fry the Chicken
In a large skillet or deep fryer, heat oil over medium-high heat. Once hot, carefully add the breaded chicken breasts. Fry for 6-8 minutes on each side or until golden brown and cooked through. Remove and drain on paper towels.

On the bottom half of each burger bun, spread a generous amount of scallion aioli. Place a fried chicken breast on top, drizzle with Nashville sauce, and add lettuce, tomato slices, and pickle slices. Top with the other half of the bun.
