In a bowl, combine chopped lemongrass (white part only), minced garlic, grated ginger, soy sauce, honey, vegetable oil, salt, and black pepper. Mix well and add the chicken breasts. Ensure the chicken is well coated. Cover and let marinate in the refrigerator for at least 30 minutes.

Heat a large skillet over medium heat. Add the marinated chicken breasts and cook for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center. Remove from the skillet and let rest.
