Prepare the Marinade
In a small bowl, combine olive oil, minced garlic, chopped fresh rosemary, salt, black pepper, and lemon juice. Mix well.

Marinate the Steak
Place the ribeye steaks in a shallow dish or a large resealable plastic bag. Pour the marinade over the steaks, ensuring they are well coated. Cover the dish or seal the bag and refrigerate for at least 1 hour, preferably overnight.

Preheat the Grill
Preheat your grill to high heat (about 450°F to 500°F or 232°C to 260°C).

Grill the Steak
Remove the marinated steaks from the refrigerator and let them sit at room temperature for about 30 minutes before grilling. Place the steaks on the grill and close the lid. Grill for 4-5 minutes on one side.

Rest the Steak
Once done, remove the steaks from the grill and let them rest for about 5-10 minutes before slicing. This allows the juices to redistribute.

Top the grilled ribeye with a pat of butter and sprinkle with fresh parsley if desired. Serve hot with your choice of sides.
