Preparing the French Toast

Whisk the Egg Mixture
In a large mixing bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, and a pinch of salt until well combined.

Soak the Bread
Dip each slice of thick bread into the egg mixture, allowing it to soak for about 30 seconds on each side, ensuring it's well coated.

Cook the French Toast
Heat a non-stick skillet or griddle over medium heat. Add a little butter or oil to the skillet. Once hot, place the soaked bread slices on the skillet, cooking for about 3-4 minutes on each side or until golden brown.

Toast the Almonds
In a small dry skillet over medium heat, add sliced almonds. Toast for about 3-5 minutes, stirring frequently until golden and fragrant. Remove from heat and set aside.

Make the Whipped Cream Cheese
In a separate bowl, beat the cream cheese with powdered sugar and heavy cream until smooth and fluffy. Adjust sweetness to taste.

On each plate, stack the cooked French toast, top with fresh blueberries, sprinkle with toasted almonds, and dollop with the whipped cream cheese mixture.
