Sear the Beef
In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced beef and season with salt and black pepper. Sear for 2-3 minutes until browned. Remove the beef from the skillet and set aside.

Cook the Mushrooms
In the same skillet, add the remaining tablespoon of olive oil. Add the sliced mushrooms and sauté for about 5 minutes until softened and browned.

Add Chive Sour Cream
Remove the skillet from heat and stir in the chive sour cream until well incorporated. Adjust seasoning with salt and pepper as needed.

Serve the Dish
Plate the pappardelle noodles and top with the beef stroganoff mixture. Garnish with crispy fried onions. Serve the toasted ciabatta on the side.
