Prepare work area

Line a baking sheet with parchment paper or a silicone mat. Have a serving tray or another baking sheet ready for cooling. Measure and set out all mix-ins and toppings.

Melt white chocolate

Place the chopped white chocolate (or chips) in a heatproof bowl. Melt using a double boiler over gently simmering water, stirring frequently until smooth, about 5–7 minutes. Alternatively, microwave in 20–30 second bursts at 50% power, stirring between bursts, until smooth. If chocolate is too thick, stir in up to 1 tsp neutral oil or up to 1 tbs melted unsalted butter to loosen for drizzling and mixing.

Mix in crunchy pieces

Fold 1 cup of the pretzel bites and the 1 cup of toffee pieces into about two-thirds of the melted white chocolate so they are evenly coated but still retain crunch. Reserve the remaining pretzels and toffee for topping.

Spread mixture

Spoon the coated chocolate-and-crunch mixture onto the prepared parchment in an even layer about 1/4–1/2 inch thick, leaving space between clusters if you want separate pieces. Use an offset spatula to smooth and level. If making a slab to cut later, spread into a roughly 8x8-inch square.

Caramel drizzle

Warm the caramel sauce slightly if it is very stiff: microwave for 10–15 seconds or warm in a small saucepan over low heat. If needed, stir in up to 1 tablespoon heavy cream to reach a drizzling consistency. Transfer caramel to a small piping bag, squeeze bottle, or use a spoon.

Drizzle the warmed caramel in thin ribbons over the chocolate-and-crunch layer. Work quickly but gently so the caramel forms decorative lines without sinking into the white chocolate.

Toppings and finish

Add reserved toppings

While the white chocolate and caramel are still slightly warm and tacky, immediately sprinkle the remaining 1/2 cup pretzel bites and any remaining toffee pieces across the top so they stick. Scatter the 2 tablespoons Demerara sugar evenly over the surface to add golden crunch.

Finish with salt: Sprinkle the 3 teaspoons pretzel salt (or coarse sea salt) lightly and evenly across the slab. The salt should be noticeable but not overwhelming—adjust to taste if making a smaller batch.

Set and portion

Allow the slab to cool at room temperature until the chocolate and caramel are fully set, about 1–2 hours. For faster setting, chill on a tray in the refrigerator for 20–30 minutes, but monitor so the Demerara sugar doesn't draw moisture. Once firm, break into clusters or cut into squares.

Storage

Store in an airtight container at room temperature for up to 5 days or refrigerate for up to 2 weeks. If refrigerated, bring to room temperature 10–15 minutes before serving for best texture.
