Method
Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats. Set aside.
Cream butter and sugars: In a large bowl or stand mixer fitted with the paddle attachment, cream 1 cup softened unsalted butter with 1/2 cup granulated sugar and 3/4 cup packed light brown sugar on medium speed until light and fluffy, about 2–3 minutes. Scrape down bowl as needed.
Add eggs and vanilla: Add 2 large eggs one at a time, mixing until incorporated, then add 2 tsp pure vanilla extract and mix until combined.
Whisk dry ingredients: In a medium bowl, whisk together 2.5 cups all-purpose flour, 1 tsp baking soda, and 1/2 tsp kosher salt.
Combine wet and dry: With the mixer on low, gradually add the dry ingredients to the creamed mixture until just combined. Do not overmix — stop when there are no visible streaks of flour.
Mix-ins & Shaping
Fold in mix-ins: Using a spatula, fold 1.25 cups white chocolate chips, 1 cup roughly chopped pretzel bites, 3/4 cup chopped toffee bits, and 1/2 cup chopped toasted tree nuts into the dough until evenly distributed. Reserve a small handful (about 2 Tbs) each of pretzel pieces, white chocolate chips, and toffee bits for topping.
Optional caramel centers: If using caramel candies, flatten dough slightly into 2-tablespoon (approx.) portions, place a quartered unwrapped caramel in the center of half the portions, then top with an equal-sized dollop of dough to fully enclose the caramel. Ensure seams are sealed to avoid leaking.
Portion cookies: Using a 2-tablespoon scoop (or a 1.5-inch to 2-inch diameter cookie scoop), portion rounded mounds of dough about 2 tablespoons each onto prepared baking sheets, spacing about 2.5 inches apart to allow spreading. If not using caramel centers, simply scoop mounds.
Top cookies: Gently press the reserved pretzel pieces, white chocolate chips, and toffee bits on top of each dough mound. Sprinkle about 1/4 teaspoon Demerara sugar over each cookie (total ~2 tablespoons across the batch) and finish with a very light pinch of pretzel salt or flaky sea salt on each cookie to create the sweet-and-salty contrast.
Chill (optional for thicker cookies): For thicker, less-spread cookies, chill the sheet with scooped dough in the refrigerator for 20–30 minutes before baking.
Bake & Finish
Bake cookies: Bake in the preheated 350°F oven for 10–12 minutes, rotating the sheets halfway through. Cookies should be golden at the edges, set but slightly soft in the centers. If you enclosed caramels, add an extra 1–2 minutes and watch closely to avoid caramel leak.
Cool on pans: Remove sheets from oven and allow cookies to rest on the baking sheet for 5 minutes so they set, then transfer cookies to a wire rack to cool completely.
Drizzle with caramel and final sprinkle: Warm 1/2 cup caramel sauce briefly (microwave 15–25 seconds until pourable) and drizzle over cooled cookies using a spoon or small piping bag. Immediately sprinkle a tiny pinch more pretzel salt and a light dusting of Demerara sugar on the warm caramel for extra crunch and shine.
Storage: Store cooled cookies in an airtight container at room temperature for up to 4 days. If cookies have caramel centers or heavy drizzle, place parchment between layers to prevent sticking. For longer storage, freeze baked cookies (tray flash-freeze, then transfer to freezer-safe container) up to 2 months.
