    Prepare protein

    If using ground beef: heat a large skillet over medium-high heat and add 1 tbs vegetable oil. Add chopped onion and sauté 2–3 minutes until translucent. Add garlic and cook 30 seconds. Add ground beef, breaking it up with a spatula. Cook until browned, about 6–8 minutes. Drain excess fat if necessary. If using shredded chicken: heat 1 tbs oil in the skillet, sauté onion and garlic 2–3 minutes, then add shredded cooked chicken to warm through.

    Season filling

    Stir in chili powder, 1 tsp cumin, 1 tsp salt, 1/2 tsp black pepper and 1/4 cup water. Reduce heat to medium-low and simmer 3–4 minutes until flavors combine and mixture is slightly saucy. Taste and adjust salt/seasoning. Remove from heat and keep warm.

Mild Red Sauce

    In a small saucepan over medium heat, warm 1 tsp olive oil. Add 1/4 cup finely chopped onion and 1 tsp minced garlic; sauté 1–2 minutes until softened but not browned. Add 1 cup tomato sauce, 1/4 cup water, 1/2 tsp mild chile powder (or paprika), 1/4 tsp cumin and 1/4 tsp salt. Bring to a gentle simmer and cook 5–7 minutes, stirring occasionally, until slightly thickened. Taste and adjust seasoning. Keep warm.

Toppings & Assembly

    Warm tortillas

    Warm the flour tortillas on a dry skillet or comal over medium heat 20–30 seconds per side until pliable, or wrap in a damp towel and microwave 20–30 seconds.

    Assemble burritos

    Lay one warm tortilla flat. Spoon approximately 1/4 of the seasoned beef or chicken down the center (about 3.5–4 oz). Spoon 2–3 tbs of mild red sauce over the meat. Sprinkle about 1/4 cup shredded cheese on top so it melts slightly. Add about 1/4 cup shredded lettuce, 2 tbs diced tomato, and 2 tbs sour cream. Add cilantro if desired.

    Fold burrito

    Fold the sides of the tortilla in toward the center, then roll from the bottom up to enclose the filling tightly. Place seam-side down on the skillet briefly (about 30–45 seconds) to seal and warm through, if desired.

    Serve: cut each burrito in half if preferred, garnish with extra sauce, cheese or lime wedge. Serve immediately while hot.
