Cook aromatics
Heat a large skillet over medium-high heat. Add 1 tablespoon oil. When shimmering, add the chopped onion and sauté 3–4 minutes until translucent. Add the minced garlic and cook 30–45 seconds until fragrant.

Brown the meat
Add the ground beef (or shredded cooked meat) to the skillet. Break it up with a spatula and cook 6–8 minutes until browned and no longer pink. Drain excess fat if necessary.

Season and combine
Stir in the taco seasoning, salt, and pepper. Add the drained black beans, corn, and diced tomatoes. Pour in 1 cup water or broth, stir to combine, and bring to a gentle simmer. Reduce heat to medium-low and simmer 5–7 minutes until liquid reduces slightly and flavors meld. Taste and adjust seasoning.

Finish filling
If using cooked rice as an extra, stir in up to 2 cups cooked rice now to warm through. Remove from heat and set the filling aside while you warm tortillas and prepare toppings.

Assemble burritos
Lay a warmed tortilla flat. Spoon about 3/4 to 1 cup of the filling down the center of the tortilla, leaving about 2 inches uncovered at each end. Top with 1/4 cup shredded cheese, a handful of shredded lettuce, 2 tablespoons salsa, 2 tablespoons sour cream, and about 1/4 cup avocado or guacamole. Add cilantro and pickled jalapeños if using. Squeeze a little lime over the filling and drizzle hot sauce if desired.

Fold burrito
Fold the sides of the tortilla inward over the filling, then fold the bottom up and roll tightly toward the top to enclose the filling. Place seam-side down on a plate.

Optional crisp/sear
For a crisp exterior, heat a nonstick skillet over medium heat and place assembled burrito seam-side down. Cook 1–2 minutes per side until golden and crisp, pressing gently with a spatula.

Serve
Cut the burrito in half on the bias if desired. Serve immediately with extra salsa, sour cream, guacamole, and lime wedges.
