Prep scallops
Pat the scallops very dry with paper towels. Remove the small side muscle if present. Season both sides lightly with 1 tsp fine sea salt and 1/2 tsp freshly ground black pepper. Let rest at room temperature for 10–15 minutes while you prepare the apple and sauce.

Sear scallops
Heat a large heavy skillet or cast-iron pan over high heat until smoking hot (about 3–4 minutes). Add 1 tablespoon of beef tallow to the pan and swirl to coat. Place scallops in the pan spaced apart; do not overcrowd. Sear without moving for 90 seconds to 2 minutes until a deep golden crust forms. Flip and cook the second side 45–60 seconds until just opaque in the center (total cook time ~2.5–3.5 minutes depending on scallop size). Transfer to a warm plate and tent lightly with foil.

While the pan heats, core the apple and cut into 6–8 wedges about 1/2-inch thick. In a medium skillet over medium heat, melt 1 tablespoon unsalted butter. Add the apple wedges in a single layer and sprinkle 1 teaspoon light brown sugar and 1/8 teaspoon fine sea salt over them. Cook without stirring for 2–3 minutes to develop color, then gently flip and cook another 2 minutes until golden and just softened but still holding their shape. Splash 1/2 teaspoon lemon juice over the apples, toss once to glaze, then remove to a plate and keep warm.

Optional grill finish: for a smoky char, transfer apple wedges to a preheated grill or grill pan over high heat for 30–45 seconds per side after pan-searing to add grill marks.
Beef tallow beurre noisette (browned tallow sauce)

After removing scallops from the hot pan, lower heat to medium and add 2 tablespoons rendered beef tallow and 1 tablespoon unsalted butter to the pan drippings. Swirl and cook, stirring gently, until the butter browns lightly and the mixture smells nutty, about 1–2 minutes. Watch carefully to avoid burning.

Stir in 1/2 teaspoon fresh thyme leaves and 1/2 teaspoon apple cider vinegar; scrape up any browned bits from the pan with a wooden spoon. Taste and season with 1/4 teaspoon fine sea salt and 1/8 teaspoon freshly ground black pepper. If you reserved lemon juice from the scallops, add a few drops to balance richness.

Remove from heat and keep warm. The sauce should be glossy and lightly thickened — if it becomes too firm, whisk in a teaspoon of warm water or an extra 1/2 teaspoon tallow to loosen.
Plating & garnish

To serve 4 (2 scallops per person) or as a composed appetizer for 2–3, spoon a little warm beef tallow beurre noisette onto each serving plate to form a small pool.

Scatter microgreens or baby watercress (about 1/4 cup total) and snipped chives over the dish. Finish with a light sprinkle of flaky sea salt and a twist of freshly ground black pepper. Serve immediately.
