Oysters & Garnishes

Method

Hoja Santa Oil (aromatic finishing oil)

    Blanch the hoja santa leaves: bring a small pot of water to a gentle boil, add leaves and blanch for 10–15 seconds until bright green. Immediately transfer leaves to an ice bath to stop cooking, then pat dry thoroughly.

    Warm the grapeseed oil gently in a small saucepan over the lowest heat until it reaches 140–150°F (60–65°C). Do not let it smoke; the goal is to extract aroma without frying.

    Combine the blanched hoja santa leaves and warm oil in a heatproof container (immersion blender cup or jar). Add 1/4 tsp fine salt. Use an immersion blender to emulsify/blend until the leaves are fully incorporated and the oil is fragrant and pale green, about 45–60 seconds. Let the oil cool to room temperature, then strain through a fine-mesh sieve lined with cheesecloth into a small jar. Reserve. Yield: about 6–7 tbsp.

Benanti Carricante & Acid Dressing

    In a small bowl, whisk together 1.5 tbsp Benanti Carricante, 2 tbsp fresh grapefruit juice, 1 tsp champagne vinegar, 1/4 tsp fine sea salt and 1/8 tsp white pepper until the salt dissolves and the dressing is balanced. Taste and adjust acid or salt slightly if needed. Set aside.

Noblesse & Finishing Components

    If using Noblesse, measure 1 tsp. If unavailable, use 1 tsp of a gentle aged soy reduction or 1/2 tsp light fish sauce diluted with 1/2 tsp water. Stir in 1/2 tsp finely grated lemon zest to lift the savory base. This component will be used as a whisper of umami on each oyster.

Prepare Grapefruit Segments & Herbs

    Using a sharp knife, cut away peel and pith from the grapefruit and segment it (supremes). Collect the segments and gently remove any membrane bits. Chop the segments into small pieces about 1/4–1/2 inch if they are large. Reserve 1/2 cup.

    Pick micro-tulsi basil leaves and pat dry. Finely snip chives.

Shuck & Dress Oysters

    Clean oyster shells under cold running water and scrub any grit. Keep them chilled while you work.

    Shuck oysters: hold oyster cup-side down in a towel or oyster holder, insert an oyster knife at the hinge, twist to pop, run the knife along the top shell to cut the muscle and remove the top shell. Slide the blade under the oyster meat to free it from the bottom shell but keep it sitting in its liquor (natural juice). Repeat for all oysters. Discard top shells and check each oyster for shell fragments.

    Spread a bed of crushed ice on a serving platter and nestle the oysters into the ice to keep them stable and cold.

    Lightly spoon about 1/2 tsp of the Benanti–grapefruit dressing onto each oyster (just enough to brighten the liquor).

    On each oyster, place a small pinch (about 1/2 tsp) of the chopped grapefruit supremes.

    Dot each oyster with 1/8 tsp Noblesse (or the soy/fish sauce substitute). Keep this sparing — it should be a subtle umami accent, not overpowering.

    Using a small spoon or dropper, add one small drizzle (about 1/4 tsp) of hoja santa oil to each oyster. The oil should be aromatic and barely coat the surface.

    Finish each oyster with one micro-tulsi leaf (or micro basil), a few snips of chive, and a tiny sprinkle of lemon zest (a whisper, not a mound). If desired, finish with a barely perceptible drizzle (a few drops) of very mild extra-virgin olive oil.

Serve

    Plating

    Arrange the dressed oysters on the crushed ice platter, spacing them so each guest can easily pick one. Garnish the ice with extra micro herbs or edible flowers for color.

    Serve immediately with small forks and lemon wedges on the side. Recommend serving additional chilled Benanti Carricante alongside the oysters.
