Method

Preparation

  1. 1

    Chill glass

Place a martini or coupe glass in the freezer for 5–10 minutes, or fill with ice and cold water while you prepare the cocktail to chill thoroughly.

  2. 2

    Optional glass rinse

If using the optional rinse, pour 0.25 oz orange liqueur (or a few drops of orange oil diluted) into the chilled glass, swirl to coat the interior, then discard any excess or pour it out. This adds a subtle orange aroma.

  3. 3

Dry shake (if using egg white)

In a cocktail shaker, combine 2 oz vodka, 0.75 oz Licor 43, 0.5 oz fresh lemon juice, 0.5 oz blood orange juice, 0.25 oz simple syrup, and 0.5 oz egg white (if using). Do a vigorous dry shake (no ice) for about 15–20 seconds to emulsify and build texture.

  4. 4

    Wet shake

Add a large handful of ice to the shaker and shake hard for 12–15 seconds until well chilled (shake until the shaker is very cold to the touch). If not using egg white, combine all liquid ingredients with ice and shake 12–15 seconds.

  5. 5

    Double strain

Double-strain the cocktail into the chilled martini or coupe glass using a Hawthorne strainer and a fine mesh (or tea) strainer to remove ice shards and any coagulated egg white bits, yielding a silky texture.

  6. 6

    Garnish & finish

Express the lemon twist over the surface of the drink by holding it skin-side down about 3–4 inches above the glass and giving it a firm squeeze to release oils onto the drink. Add 2 dashes of orange oil or orange bitters on the foam or surface for aroma. Float a thin wheel of blood orange on the surface or lay it against the rim.

  7. 7

    Serve

Serve immediately while chilled. Advise guests to sip and enjoy the layered citrus and vanilla notes from the Licor 43 and orange oil.
