Chocolate Fondant (molten cakes)

    Prep and preheat

    Preheat oven to 200°C (390°F). Generously butter six 6-ounce (180 ml) ramekins (or 8 smaller), dust with cocoa powder, tapping out excess. Place prepared ramekins on a baking tray.

    Melt chocolate and butter

    In a heatproof bowl set over a barely simmering pot of water (double boiler), combine chopped bittersweet chocolate and 200 g butter. Stir occasionally until fully melted and smooth. Remove from heat and let cool 3–4 minutes.

    Whisk eggs and sugar

    In a separate bowl, whisk together 4 whole eggs, 2 egg yolks and 160 g granulated sugar until mixture is pale, slightly thickened and sugar is dissolved (about 2–3 minutes by hand or 1–2 minutes with a mixer on medium).

    Combine and fold

    Slowly pour the melted chocolate-butter mixture into the egg-sugar mixture, whisking steadily to combine. Add 60 g flour and 1 tsp fine sea salt and fold gently with a spatula until just incorporated and smooth. Do not overmix; the batter should be glossy and slightly thick.

    Fill molds and chill (optional)

    Divide batter evenly among the prepared ramekins (about 95–110 g batter each for six). For more precise timing, cover and refrigerate the filled ramekins for 30–60 minutes — this firms the edges and helps achieve a good contrast between set exterior and molten center. If baking immediately, proceed to next step.

    Bake

    Bake in the preheated oven: for 6 ramekins, bake 12–14 minutes for a soft molten center (edges set, center jiggly). If chilled, add 1–2 minutes to baking time. Smaller ramekins will require less time (9–11 minutes). Check one ramekin: top should be set and slightly cracked; center remains soft.

    Unmold

    Remove from oven and let cakes rest 1 minute. Run a small knife around the edge to loosen, invert onto warm plates, and gently lift the ramekin. If sticking, tap bottom and re-loosen sides.

Hazelnut Croquant

    Toast and chop hazelnuts: If not already toasted, spread 150 g hazelnuts on a baking sheet and roast at 180°C (350°F) for 8–10 minutes until fragrant. Rub in a clean towel to remove loose skins. Roughly chop or pulse in a food processor to obtain both small pieces and some fine dust.

    Make caramel and mix: In a heavy-bottomed saucepan, combine 100 g granulated sugar and 1 tbs light corn syrup with 2–3 tablespoons water. Heat over medium without stirring (swirl pan occasionally) until sugar dissolves and color turns a deep amber (around 170°C / 338°F on a candy thermometer). Remove from heat immediately and quickly stir in roasted hazelnuts, 1 tsp flaky sea salt and 10 g butter if using. Spread the mixture thinly on a parchment-lined tray and let cool completely.

    Break into pieces: Once cool and set, break the croquant into shards or pulse briefly for a crunchier brittle to sprinkle. Reserve about 30–40 g of smaller pieces for adding into the fondant batter if desired (optional) and the rest for garnish.

Hibiscus-Vanilla Sauce

    Infuse hibiscus: In a small saucepan combine 300 ml water and 10 g dried hibiscus flowers. Bring to a gentle simmer, then turn off heat and let steep for 10 minutes with the lid on. If using a vanilla bean, add the split pod to the infusion while steeping; if using vanilla extract, hold for later.

    Strain and sweeten: Strain hibiscus liquid through a fine sieve into a clean saucepan, pressing gently on the solids to extract flavor. Add 60 g granulated sugar and return to low heat, stirring until sugar dissolves. Simmer gently for 3–4 minutes to slightly reduce and thicken into a glossy sauce.

    Finish with vanilla and butter: Remove from heat, stir in the vanilla extract (or scrape seeds from the rested vanilla bean into the sauce) and 1 tbsp lemon juice to brighten. Whisk in 10 g cold butter, a cube at a time, to give a silky finish. Taste and adjust for sweetness/tartness. Keep warm until plating.

Assembly & Plating

    Plate sauce: Spoon a smear or pool of warm hibiscus-vanilla sauce onto each plate.

    Place fondant: Invert each molten cake onto the plate on top of or beside the sauce so some sauce peeks out when cut.

    Garnish with croquant: Scatter hazelnut croquant shards around and partially on top of the fondant for crunch and hazelnut flavor. If you reserved small croquant pieces to fold into batter, note that will give extra texture — serve those cakes with slightly shorter bake time to retain the molten center.

    Finish and serve: Dust lightly with confectioners' sugar if desired, add a small edible hibiscus petal or microherbs, and serve immediately so the center is molten. Provide a spoon for guests to break into the cake and enjoy the lava center with tart hibiscus sauce and crunchy croquant.
