Prep fruit
Wash and dry the fruit. Pit and chop stone fruit into roughly 1/2-inch pieces. If using berries keep whole if small or halve large berries. If using apples or pears, peel if desired and dice into 1/2-inch pieces.

Cook fruit
In a medium saucepan set over medium heat, combine the chopped fruit, granulated sugar, lemon juice, lemon zest, water, and a pinch of salt. Stir to combine and let sit 5 minutes so the fruit releases some juice.

Simmer to jam
Bring the mixture to a gentle boil, then reduce heat to medium-low. Cook, stirring occasionally and mashing some fruit with the back of a spoon for a jammy texture, until the mixture thickens and reduces by about one-third, 12–18 minutes. If using pectin, sprinkle it in at the start of the simmer and stir vigorously for 1 minute to disperse.

Finish and cool
Remove from heat, stir in vanilla (if using). Taste and adjust sugar or lemon for balance. Transfer jam to a heatproof bowl or jar and let cool to room temperature; it will thicken further as it cools. Refrigerate if not using immediately (keeps 1–2 weeks refrigerated).

Heat pan
Place a large skillet or griddle over medium heat. Add the butter and olive oil and let the butter melt and foam but not burn.

Toast bread
Brush both sides of each bread slice very lightly with the melted butter/oil mixture or use a pastry brush to coat. Place 2–3 slices in the skillet (do not overcrowd). Cook 2–3 minutes per side, pressing gently with a spatula, until golden brown and crisp at the edges. Repeat with remaining slices.

Season toast
Immediately after toasting, sprinkle the warm toast with a small pinch of coarse sea salt and freshly ground black pepper to taste.

Assemble
Spread a thin layer (about 1–2 tablespoons) of ricotta or cream cheese on each warm toast slice if using. Spoon 1–2 generous tablespoons of the seasonal jam onto each slice and spread lightly so fruit pieces remain visible.

Top each slice with torn fresh herbs and a sprinkle of chopped toasted nuts if desired. Serve immediately while toast is still warm and jam is slightly warm or cooled.
