    Hard-cook the eggs

    Place 12 large eggs in a single layer in a saucepan. Add enough cold water to cover the eggs by 1 inch. Add 1 tsp salt. Slowly bring to a gentle boil over medium-high heat. Once boiling, cover the pan, remove from heat, and let sit 10–12 minutes for fully set yolks.

    Cool and peel

    Drain hot water and transfer eggs to an ice bath (bowl of ice and cold water) for at least 10 minutes to stop cooking and make peeling easier. Gently crack shells and peel; rinse to remove small shell bits.

    Quick pickle (heritage note)

    In a small saucepan combine 1 cup white vinegar, 1 cup water, 1 tsp salt and 1 tbs sugar. Bring to a simmer to dissolve sugar and salt, then remove from heat and cool slightly. Place peeled eggs in a shallow container and pour warm pickling liquid over them. Let sit at room temperature 30 minutes or refrigerate up to 2 hours for a subtle tang and slightly colored white — this step echoes older preservation methods and adds brightness. Remove eggs from liquid and pat dry before proceeding.

Filling

    Prepare yolks

    Slice each egg lengthwise and gently remove yolks into a medium mixing bowl. Reserve whites on a serving platter.

    Mash and season

    Using a fork, mash the yolks until smooth. Add 1 cup mayonnaise, 2 tsp Dijon mustard, 1 tsp whole-grain mustard, 1 tsp honey, 1 tbsp minced shallot, 1 tbsp chopped capers, 2 tbsp chopped chives, 1 tbsp chopped dill, 1 tsp smoked paprika, 1 tsp salt, 1 tsp freshly ground black pepper, 1 tsp lemon zest and 1 tsp fresh lemon juice. Mix thoroughly until creamy and homogenous. Taste and adjust seasoning — add a bit more salt, pepper or lemon if desired.

    Refine texture (optional)

    If you prefer an extra-smooth filling, pass the yolk mixture through a fine mesh sieve while pressing with a spatula, then fold it back together. Alternatively, use a handheld mixer for 10–15 seconds to aerate and smooth.

    Assemble deviled eggs

    Transfer yolk mixture to a piping bag fitted with a large star or round tip (or use a small spoon). Pipe or spoon the filling into each egg white half, mounding slightly for an attractive presentation.

Garnishes & Finishing

    Lightly dust the filled eggs with 1/2 tsp smoked paprika. Top each egg with a few threads of pickled red onion and a sprinkle of crispy fried shallots for texture. Garnish every few eggs with small dill sprigs and scatter the extra snipped chives over the platter. Chill for 15–30 minutes to let flavors meld, then serve chilled or at cool room temperature.
