Prepare Meats

Cook sausage patties
Heat a large skillet over medium heat. Add the two sausage patties (no extra oil if they render fat). Cook 5–6 minutes per side, pressing gently to maintain contact with the pan, until internal temperature reaches 160°F (71°C) and patties are golden brown. Transfer to a plate and tent loosely with foil to keep warm.

Cook bacon
In the same skillet or a separate pan, add the 4 bacon slices and cook over medium heat until crisp, about 3–5 minutes per side depending on thickness. Transfer cooked bacon to a paper-towel-lined plate to drain. Reserve 1–2 teaspoons of bacon fat in the pan for flavor (optional) and wipe excess if desired.

Melt Gruyère
Place the toasted bottom halves on a baking sheet or the skillet. Divide the 3 oz Gruyère (about 1.5 oz per sandwich) and place on top of the warm sausage patties. Return patties to pan or place under broiler for 30–60 seconds until cheese is just melted and gooey. Then place the cheesy sausage patties on the toasted muffin bottoms.

Make folded eggs
Wipe the skillet clean and reduce heat to medium-low. Add 1 tbs unsalted butter and let melt and foam. Whisk the 2 large eggs in a bowl with 1 tsp mayonnaise, 1 tsp Dijon mustard, 1 tsp salt, and 1/4 tsp black pepper until smooth. Pour eggs into the skillet and cook gently, stirring slowly to create soft curds, 1–2 minutes, then let them set briefly and fold into a roughly rectangular folded omelet about the width of the muffins. Transfer onto the cheesy sausage patties on the muffin bottoms.

Finish sandwich
Top the eggs with 2 slices of cooked bacon per sandwich, then place the muffin tops over the bacon. If you like the sandwich warm and slightly pressed, return assembled sandwiches to the skillet for 30 seconds per side over low heat, pressing gently with a spatula to marry the layers and warm through.

Optional garnish and serve
If desired, spread a little extra mayo or hot sauce on the muffin tops before serving. Serve immediately while hot.
