Preparation

   Chill the Glass

   Begin by chilling a rocks glass by placing it in the freezer or filling it with ice water for a few minutes.

   Prepare the Glass with Absinthe

   Once the glass is chilled, discard the ice or water. Add the absinthe to the glass, swirling it around to coat the inside. Discard any excess absinthe.

   Mix the Drink

   In a mixing glass filled with ice, combine the Sazerac Rye Whiskey, simple syrup, and Peychaud's bitters. Stir well until the mixture is chilled.

   Strain the Cocktail

   Strain the mixed cocktail into the prepared rocks glass, ensuring no ice gets into the final drink.

   Garnish

   Take a piece of lemon peel and twist it over the drink to release its oils. Optionally, you can run the peel around the rim of the glass before placing it in the drink as garnish.
