Preparation

  1. 1

    Cook the Bacon

In a skillet over medium heat, cook the bacon slices until crispy, about 6-8 minutes. Remove from skillet and drain on paper towels. Once cooled, chop into bite-sized pieces.

  2. 2

    Cook the Shrimp

In the same skillet, add the peeled and deveined shrimp. Cook for about 2-3 minutes on each side, until they turn pink and opaque. Remove from heat and set aside.

  3. 3

    Prepare the Vegetables

If using fresh peas, blanch them in boiling water for 2 minutes, then cool in an ice bath. If using frozen peas, thaw them. Halve the cherry tomatoes and shred the carrots.

  4. 4

    Boil the Eggs

Place eggs in a saucepan and cover with cold water. Bring to a boil, then cover and remove from heat. Let sit for 12-15 minutes. Drain and cool in cold water, then peel and chop.

Assembly

  1. 5

    Combine Ingredients

In a large bowl, combine mixed greens, cooked shrimp, chopped bacon, hard-boiled eggs, peas, cherry tomatoes, shredded carrots, and crumbled feta cheese.

  2. 6

    Dress the Salad

Drizzle the house dressing over the salad and toss gently to combine all ingredients evenly.

  3. 7

    Serve

Divide the salad into individual bowls or plates and serve immediately.
