Blackened Shrimp

Prepare the Shrimp
In a medium bowl, toss the peeled and deveined shrimp with olive oil and blackening seasoning until evenly coated.

Cook the Shrimp
Heat a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes on each side, or until cooked through and blackened. Remove from heat and set aside.
Cilantro-Lime Rice

Cook the Rice
In a medium saucepan, combine the long-grain white rice and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the rice is tender and the water is absorbed.

Sweet Corn & Black Beans

Combine Vegetables
In a medium bowl, combine the sweet corn, black beans, diced red bell pepper, and diced tomatoes. Mix gently to combine.
Citrus Aioli

Make the Aioli
In a small bowl, whisk together the mayonnaise, lime juice, orange juice, minced garlic, and salt until smooth. Adjust seasoning to taste.
Plating

Assemble the Dish
On a serving plate, create a bed of cilantro-lime rice, top with blackened shrimp, and add the sweet corn and black beans mixture. Drizzle with citrus aioli and garnish with micro greens.
