Preparing the Portobello Mushrooms

    Clean and Marinate

    Preheat your grill to medium-high heat. Clean the portobello mushrooms with a damp cloth to remove any dirt. Remove the stems and inner gills if desired. In a small bowl, mix olive oil, salt, and black pepper. Brush the mushroom caps with the olive oil mixture on both sides.

Roasting the Vegetables

    Chop and Season

    Chop the red bell pepper, zucchini, red onion, and garlic cloves into small pieces. In a bowl, combine the chopped vegetables with olive oil, salt, and black pepper. Toss to coat evenly.

    Roast the Vegetables

    Place the seasoned vegetables on a baking sheet and roast in the preheated oven at 400°F (200°C) for 20-25 minutes until tender and slightly caramelized, stirring halfway through.

Grilling and Assembling the Sandwiches

    Grill the Portobello

    Place the marinated portobello mushrooms on the grill, gill side down. Grill for about 5-7 minutes. Flip the mushrooms and place a slice of Swiss cheese on each cap. Continue grilling for another 5 minutes until the cheese is melted and the mushrooms are tender.

    Prepare the Ciabatta

    While the mushrooms are grilling, slice the ciabatta bread in half and lightly toast it on the grill for 1-2 minutes until crispy.

    Assemble the Sandwich

    On each ciabatta half, place a grilled portobello mushroom. Top with a generous portion of roasted vegetables, drizzle with balsamic glaze, and close the sandwich with the other half of ciabatta.
