Preparation

  1. 1

    Cook the Bacon

In a skillet over medium heat, cook the bacon slices until crispy. Remove from the skillet and drain on paper towels. Once cooled, chop into small pieces.

  2. 2

    Prepare the Chicken

Preheat your oven to 400°F (200°C). Pat the chicken breasts dry and season with salt and pepper. In a shallow dish, place the Parmesan cheese.

  3. 3

    Crust the Chicken

Coat each chicken breast in the Parmesan cheese, pressing firmly to adhere. Place the coated chicken breasts on a baking sheet lined with parchment paper.

Cooking

  1. 4

    Bake the Chicken

Bake the Parmesan crusted chicken in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the cheese is golden brown.

Salad Assembly

  1. 5

    Prepare the Salad

While the chicken is baking, chop the romaine lettuce and thinly slice the red onion. In a large bowl, combine the romaine, red onion, croutons, and chopped bacon.

  2. 6

    Dress the Salad

Drizzle the Caesar dressing over the salad mixture and toss until well combined.

Serving

  1. 7

    Plate the Dish

Once the chicken is done, remove it from the oven and let it rest for a few minutes. Slice the chicken and serve over the dressed salad.

  2. 8

    Garnish

Optionally, sprinkle additional Parmesan cheese on top of the salad and serve immediately.
