Preparing the Chocolate Base

    Melt the Dark Chocolate

    Chop the dark chocolate into small pieces and place them in a heatproof bowl. Melt the chocolate over a double boiler or in the microwave in 30-second increments, stirring until smooth. Set aside to cool slightly.

    In a medium saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat, then whisk in the sugar until fully dissolved.

    Gradually add the melted chocolate to the cream mixture, whisking until smooth and well combined.

Creating the Custard

    In a separate bowl, whisk the egg yolks until they are light and frothy.
