For the Risotto

Method

Prepare the Risotto

  1. 1

    Sauté the Aromatics

In a large saucepan, heat 2 tablespoons of olive oil over medium heat. Add the finely chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and sauté for another minute until fragrant.

  2. 2

    Cook the Rice

Add the Arborio rice to the saucepan and stir for 2-3 minutes until the rice is lightly toasted. Pour in the white wine and let it simmer until absorbed.

  3. 3

    Add Broth Gradually

Begin adding the chicken or vegetable broth, one ladle at a time, stirring frequently. Allow each addition to be absorbed before adding the next. This process should take about 18-20 minutes until the rice is creamy and al dente.

  4. 4

    Finish the Risotto

Once the rice is cooked, remove from heat and stir in the grated Parmesan cheese. Season with salt and black pepper. Spread the risotto on a baking sheet to cool completely.

Prepare the Filling

  1. 5

    Combine the Cheeses

In a mixing bowl, combine the cubed mozzarella, fontina, gorgonzola, ricotta, and grated asiago cheese. Mix well to combine and set aside.

Assemble the Arancini

  1. 6

    Form the Balls

Once the risotto has cooled, take a handful of risotto and flatten it in your palm. Place a tablespoon of the cheese mixture in the center and mold the risotto around it to form a ball. Repeat until all risotto is used.

Bread and Fry the Arancini

  1. 7

    Prepare for Breading

Set up a breading station with three bowls: one with flour, one with beaten eggs, and one with breadcrumbs.

  2. 8

    Bread the Arancini

Roll each risotto ball in the flour, dip into the beaten eggs, and finally coat with breadcrumbs. Make sure they are well coated.

  3. 9

    Heat the Oil

In a deep frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

  4. 10

    Fry the Arancini

Carefully add the breaded arancini to the hot oil in batches. Fry until golden brown, about 3-4 minutes per side. Remove with a slotted spoon and drain on paper towels.

Serve

  1. 11

    Plate and Enjoy

Serve the fried arancini warm with a side of marinara sauce for dipping. Enjoy your delicious five cheese stuffed Italian risotto balls!
