Prepare the Risotto

Cook the Rice
Add the Arborio rice to the saucepan and stir for 2-3 minutes until the rice is lightly toasted. Pour in the white wine and let it simmer until absorbed.

Add Broth Gradually
Begin adding the chicken or vegetable broth, one ladle at a time, stirring frequently. Allow each addition to be absorbed before adding the next. This process should take about 18-20 minutes until the rice is creamy and al dente.

Finish the Risotto
Once the rice is cooked, remove from heat and stir in the grated Parmesan cheese. Season with salt and black pepper. Spread the risotto on a baking sheet to cool completely.

Combine the Cheeses
In a mixing bowl, combine the cubed mozzarella, fontina, gorgonzola, ricotta, and grated asiago cheese. Mix well to combine and set aside.
Assemble the Arancini

Form the Balls
Once the risotto has cooled, take a handful of risotto and flatten it in your palm. Place a tablespoon of the cheese mixture in the center and mold the risotto around it to form a ball. Repeat until all risotto is used.

Bread the Arancini
Roll each risotto ball in the flour, dip into the beaten eggs, and finally coat with breadcrumbs. Make sure they are well coated.

Heat the Oil
In a deep frying pan, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Arancini
Carefully add the breaded arancini to the hot oil in batches. Fry until golden brown, about 3-4 minutes per side. Remove with a slotted spoon and drain on paper towels.
