Preparation

    Prepare the Chicken

    Preheat the grill to medium-high heat. Season the chicken breasts with olive oil, salt, black pepper, and garlic powder.

    Grill the Chicken

    Place the seasoned chicken on the grill. Cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C). Remove from grill and let it rest.

    Sauté the Onion

    While the chicken is resting, slice the onion. In a skillet, heat a tablespoon of olive oil over medium heat. Add the sliced onion and sauté until they are soft and translucent, about 5 minutes.

    Prepare the Red Peppers

    If using jarred fire-roasted red peppers, drain and chop them into bite-sized pieces. If using fresh, grill or roast them until charred, then peel and chop.

    Slice the Chicken

    Once the chicken has rested, slice it into thin strips.

    Prepare the Baguette

    Slice the French baguette horizontally. You can lightly toast it on the grill or in the oven if desired.

    Layer the Ingredients

    On the bottom half of the baguette, layer the sliced grilled chicken, sautéed onions, fire-roasted red peppers, and shredded mozzarella cheese.

    Add the Chipotle Aioli

    Drizzle the chipotle aioli over the layered ingredients. Adjust the quantity based on your taste preference.

    Finish the Sandwich

    Close the baguette and press down gently. Optionally, you can place the whole sandwich back on the grill for a few minutes to melt the cheese.
