Preparation

  1. 1

    Prepare the Ingredients

Start by gathering all the ingredients. Cube the caribou meat, chop the onion, mince the garlic, slice the carrots and mushrooms, and dice the potatoes.

  2. 2

    Season the Meat

In a large bowl, combine the cubed caribou meat with salt, black pepper, paprika, and dried thyme. Mix well to ensure the meat is evenly coated.

Cooking

  1. 3

    Sear the Meat

In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the seasoned caribou meat and sear on all sides until browned, about 5-7 minutes. Remove the meat and set aside.

  2. 4

    Sauté Vegetables

In the same pot, add the chopped onions and minced garlic. Sauté for about 2-3 minutes until the onions are translucent. Add the sliced carrots and mushrooms, and cook for another 5 minutes.

  3. 5

    Combine Ingredients

Return the seared caribou meat to the pot. Add the diced potatoes, bay leaf, and beef broth. Stir well to combine all ingredients.

  4. 6

    Add Wine and Simmer

Pour in the red wine and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 1.5 to 2 hours, or until the meat is tender.

Serving

  1. 7

    Final Touch

Once the caribou meat is tender, taste and adjust seasoning if necessary. Remove the bay leaf before serving.

  2. 8

    Serve Hot

Ladle the Caribou Crossing stew into bowls and serve hot. Enjoy with crusty bread if desired.
