Prepare the Pasta

Cook the Proteins

Sauté the sausage
In a large skillet over medium heat, add 2 tablespoons of olive oil. Once hot, add the sliced andouille sausage and cook until browned, about 3-4 minutes.

Prepare the Sauce

Make the Cajun cream sauce
In the same skillet, add the minced garlic and sauté for about 1 minute until fragrant. Pour in the heavy cream and sprinkle with Cajun seasoning. Stir to combine and bring to a simmer.

Add cheese
Gradually whisk in the grated Parmesan cheese until melted and the sauce is smooth. If the sauce is too thick, add some of the reserved pasta water to reach desired consistency.
Combine and Serve

Toss everything together
Add the cooked linguine, sautéed sausage, and shrimp to the skillet. Toss to coat the pasta evenly with the sauce. Add the halved cherry tomatoes and chopped scallions, mixing gently.

Serve the Cajun carbonara immediately, garnished with additional Parmesan cheese and scallions if desired.
