Prepare the Cod
Pat the cod fillets dry with paper towels. This helps to achieve a crispy batter.

Make the Batter
In a mixing bowl, combine the all-purpose flour, salt, and black pepper. Gradually whisk in the ale until smooth and well-combined.

Heat the Oil
In a large heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter the Cod
Dip each cod fillet into the batter, ensuring it is fully coated.

Fry the Cod
Carefully place the battered cod into the hot oil. Fry for about 4-5 minutes on each side or until golden brown and cooked through. Remove and place on paper towels to drain excess oil.

Prepare the Vegetables
Slice the tomato and onion into thin rings. Set aside.

Assemble the Sandwich
On the bottom half of each brioche bun, place a lettuce leaf. Top with a fried cod fillet, followed by a slice of American cheese, tomato slices, onion rings, and pickle slices.

Add Tartar Sauce
Spread tartar sauce generously on the top half of the brioche bun.

Place the top half of the brioche bun on each assembled sandwich. Serve immediately.
