Brewing Process

    Mashing

    In a large pot, heat 3 gallons of water to approximately 160°F (71°C). Add the pale malt and caramel malt, stirring well to avoid clumps. Maintain the temperature at around 150°F (65°C) for 60 minutes.

    Lautering

    After mashing, separate the liquid (wort) from the grains. This can be done using a strainer or a brew bag. Collect the wort in a separate pot.

    Boiling

    Bring the wort to a boil and add the bittering hops. Boil for 60 minutes, adding the aroma hops in the last 5 minutes of the boil.

    Cooling

    Once the boiling is complete, cool the wort as quickly as possible using a wort chiller or an ice bath until it reaches around 70°F (21°C).

    Fermentation

    Transfer the cooled wort to a sanitized fermentation vessel. Sprinkle the yeast on top and seal the vessel with an airlock. Allow it to ferment in a dark, cool place for 1-2 weeks.

    Bottling

    Once fermentation is complete, prepare a priming solution with the corn sugar and a cup of water. Boil for 5 minutes and cool. Mix this solution into the beer, then bottle in sanitized bottles.

    Conditioning

    Cap the bottles and let them condition at room temperature for 1-2 weeks. After this period, refrigerate and enjoy your Ragged Island 'Old Boys' draught beer!
