Prepare the Red Snapper

Rinse the red snapper fillets under cold water and pat dry with a paper towel.

Season the Fish

In a small bowl, mix olive oil, salt, and black pepper. Rub this mixture over both sides of the red snapper fillets. Squeeze half of the lime juice over the fish and set aside for 15 minutes.

Make Pico de Gallo

In a medium bowl, combine diced tomatoes, chopped onion, chopped cilantro, and minced jalapeño. Squeeze the remaining lime juice over the mixture and stir well. Season with salt to taste and set aside.

Prepare Cilantro Crema

In a blender, combine sour cream, chopped cilantro, and minced garlic. Blend until smooth. Adjust seasoning with salt as needed and set aside.

Cook the Red Snapper

Heat a grill or skillet over medium-high heat. Cook the seasoned red snapper fillets for about 4-5 minutes on each side, or until the fish flakes easily with a fork.

Serve

Place the cooked red snapper on a plate, top with pico de gallo, and drizzle cilantro crema over the top. Serve immediately.
