Blueberry Lemon Compote

Cook compote
Combine blueberries, 1 tablespoon sugar, 2 tablespoons lemon juice, 1 teaspoon lemon zest and 2 tablespoons water in a small saucepan over medium heat. Stir to combine and bring to a gentle simmer.

Simmer for 4–6 minutes, stirring occasionally, until blueberries begin to burst and mixture thickens slightly.

Mix 1 teaspoon cornstarch with 1 teaspoon cold water to make a slurry. Stir slurry into the simmering berries and cook 30–60 seconds more until the compote becomes glossy and thick enough to coat a spoon. If it becomes too thick, stir in up to 1 tablespoon water.

Prep dry ingredients
In a large bowl whisk together 1.5 cups all-purpose flour, 2 teaspoons sugar, 2 teaspoons baking powder, and 1/2 teaspoon fine sea salt until evenly combined.

Prep wet ingredients
In a separate bowl whisk the egg, 1 1/4 cups milk, 1/4 cup plain yogurt or buttermilk, 2 tablespoons melted cooled butter, 1/2 teaspoon vanilla extract, and 1 tablespoon finely grated lemon zest until smooth.

Combine batter
Make a well in the dry ingredients and pour the wet mixture into it. Stir gently with a spatula just until mostly combined; a few small lumps are fine. Do not overmix or batter will become tough.

Fold in 3/4 cup fresh blueberries gently so they are distributed but the batter remains light. If using frozen blueberries, toss them in 1 teaspoon flour first to help prevent bleeding and fold in directly from frozen.

Rest batter
Let the batter rest 5–10 minutes at room temperature while you heat the pan; this hydrates the flour and helps produce tender pancakes.

Cook pancakes
Heat a nonstick skillet or griddle over medium heat until hot. Brush or wipe with about 1 teaspoon oil or a little butter. For each pancake, pour 1/4 cup batter onto the griddle, leaving space between pancakes. Cook until bubbles form across the surface and edges start to set, about 2–3 minutes.

Flip carefully and cook the second side until golden and cooked through, about 1–2 minutes more. Transfer cooked pancakes to a warm plate and keep loosely covered while you finish remaining batter. Adjust heat as needed so pancakes brown but do not burn.
