Heat a large skillet over medium-high heat. Add vegetable oil and butter; when shimmering, add par-cooked potatoes in a single layer. Let cook undisturbed 4–5 minutes to develop a brown crust, then stir in diced onion and bell pepper. Continue to cook, stirring every 2–3 minutes, until potatoes are golden and edges are crisp, about 8–10 minutes total.

Season with salt, black pepper and paprika in the last 2 minutes of cooking. Taste and adjust seasoning. Stir in chopped parsley off the heat.

If using chicken maple sausage, heat a separate skillet over medium heat. Add the sausages and cook, turning occasionally, until browned and cooked through (internal temp 165°F / 74°C) about 8–10 minutes. If sausages are pre-cooked, cook 4–6 minutes until heated and browned.

bacon (optional)
If using bacon instead, lay strips in a cold skillet, then turn heat to medium and cook until crisp, turning as needed, 8–12 minutes. Drain on paper towels. Use whichever protein you prefer.

cook eggs your way — sunny-side up / over-easy / over-hard / scrambled
Use a nonstick skillet over medium-low heat and add butter or oil. For sunny-side up: crack eggs into the skillet, season with salt and pepper, cook gently until whites are set and yolks still runny, about 2–3 minutes. For over-easy/over-hard: cook until whites set, carefully flip and cook 10–30 seconds for over-easy (runny yolk) or 1–2 minutes for over-hard (firm yolk). For scrambled: beat eggs with a pinch of salt and pepper, pour into skillet, stir slowly until softly set, about 2–3 minutes.
