Caprese Salad Assembly

Slice the fresh mozzarella and cherry tomatoes into bite-sized pieces. Layer them on a serving platter, alternating between mozzarella and tomatoes. Tuck fresh basil leaves in between the layers. Drizzle with balsamic reduction before serving.

Prepare the Salmon

Preheat your oven to 200°C (400°F). In a bowl, mix olive oil, lemon juice, minced garlic, salt, and black pepper. Place the salmon fillets in a baking dish and pour the marinade over them, ensuring they are well-coated.

Roast the Asparagus

On a separate baking sheet, toss the asparagus with a little olive oil, salt, and pepper. Spread them out in a single layer. Place both the salmon and asparagus in the oven and roast for about 15-20 minutes, or until the salmon is cooked through and the asparagus is tender.

Chocolate Ganache

In a small saucepan, heat the heavy cream over medium heat until it just starts to simmer. Remove from heat and add the dark chocolate, stirring until smooth and completely melted. Stir in the vanilla extract.

Serve with Berries

Pour the chocolate ganache into serving bowls and top with fresh berries. Allow to cool slightly before serving.
