    Prepare glass and mint

    Choose a highball or Collins glass. Place 8–10 fresh mint leaves into the bottom of the glass. Reserve one small sprig of mint for garnish.

    Muddle

    Add the fresh lime juice and simple syrup to the glass with the mint. Gently muddle 6–8 times just to bruise the mint leaves and release their oils—avoid over-muddling to prevent bitterness.

    Add rum and bitters

    Pour 2 oz Virago Four Port blended rum into the glass. If using, add 1 dash of Angostura bitters to accent the rum's vanilla and spice notes.

    Ice and soda

    Fill the glass with crushed ice up to about 3/4 full (approximately 1 cup). Top with 2.5 oz club soda. Gently stir with a bar spoon 6–8 times to combine and chill without flattening the soda.

    Adjust and finish

    Taste and, if desired, adjust sweetness by adding an extra 1/4 oz simple syrup or brightness by squeezing a thin lime wedge. Give one short gentle stir after adjustment.

    Garnish and serve

    Garnish with a lime wheel or wedge on the rim and the reserved mint sprig. For extra aroma, clap the mint sprig between your hands once and place it on top of the drink. Serve immediately with a straw or stir stick.
