Cigar-shaped Petite Cake (makes one 4.0" x 40 portion)

Finish & Decoration (to emulate Cameroon wrapper tone and aroma)

Method

Cigar-shaped Petite Cake (makes one 4.0" x 40 portion)

1

Prepare dry ingredients

In a small bowl whisk together 0.75 cups all-purpose flour, 0.25 cups granulated sugar, 0.5 tsp baking powder, and 0.125 tsp fine salt until evenly combined.

2

Blend butter and yolk

In a separate bowl, cream 0.0625 cups (1 tbsp) softened unsalted butter lightly with 1 large egg yolk until smooth and slightly fluffy (about 30 seconds).

3

Add liquids and flavor extracts

Stir into the butter-yolk mixture 2 tablespoons whole milk, 0.5 tsp bourbon-style vanilla extract, and 0.5 tablespoon peach nectar until homogeneous. If using, whisk in 0.5 tsp cocoa powder for a deeper wrapper-like tone.

4

Combine wet and dry

Fold the dry ingredients into the wet mixture with a spatula just until no large streaks of flour remain. Do not overmix to keep the cake tender.

5

Add fruit

Fold in 2 teaspoons finely chopped dried Dominican-style fruit blend (apricot/peach) evenly into the batter.

6

Shape and bake

Preheat oven to 350°F (175°C). Line a small sheet or baking tray with parchment. Using wet hands or a small cookie scoop, shape the batter into a cigar-shaped log about 4.0 inches long and roughly 0.5–0.6 inch in diameter (to approximate a 40 ring gauge). Place on the prepared sheet. Bake for 12–16 minutes, until the top is set, lightly golden, and a toothpick inserted in the center comes out with a few moist crumbs.

7

Cool

Remove from oven and let cool on the tray for 5 minutes, then transfer to a wire rack to cool completely (about 15–20 minutes).

8

Prepare glaze

While the cake cools, warm 1 tablespoon light brown sugar with 1 teaspoon heavy cream in a small saucepan or microwave briefly until sugar dissolves and mixture is syrupy. Stir in 1 teaspoon cooled espresso or strong coffee and 0.5 teaspoon light neutral oil to give a slight sheen and roast note.

9

Glaze the petite cake

Brush the glaze over the cooled cigar-shaped cake to give a thin, glossy surface that echoes the Cameroon wrapper sheen. Allow glaze to set 10 minutes.

Finish & Decoration (to emulate Cameroon wrapper tone and aroma)

10

Lightly dust 0.25 tablespoon powdered sugar over the glazed cake, focusing on the center to create gentle highlights. If desired, lightly brush an additional thin stroke of cooled espresso to the surface for a touch more roasted note. Serve at room temperature to appreciate the mild fruit and bourbon vanilla aroma with hints of peach.
