1. Prepare glass
Place a highball or Collins glass in the freezer for a few minutes or fill it with ice to chill while you prepare the cocktail.
2. Muddle mint and lime
In a mixing glass or the chilled serving glass, add the fresh mint leaves (reserve one small sprig for garnish), the fresh lime wedge (tear into two if whole), and the simple syrup. Gently muddle 6–8 times — press firmly enough to release the mint oils and lime juice but not so hard that the mint becomes bitter.
3. Add spirits and cordial
Pour in the white rum and house lime cordial. Stir gently 6–8 seconds to combine and slightly dissolve the cordial and syrup into the mint-lime base.
4. Add ice and soda
Fill the glass with crushed ice up to the top (about 1 cup). Top with approximately 3 oz soda water. Use a long spoon to gently lift and fold the mixture to integrate the soda without bruising the mint further.
5. Adjust and finish
Taste and, if desired, add an additional 0.25–0.5 oz simple syrup or 0.25 oz house lime cordial to adjust sweetness/acidity. Give one gentle stir to combine.
6. Garnish and serve
Garnish with the reserved mint sprig (slap it between your palms once to release aroma) and a lime wheel on the rim. Serve with a straw and enjoy immediately.
