Prepare glass
Fill a highball glass or Collins glass with cubed ice until about 2/3 full (roughly 1 cup of ice).
Add rum
Measure 2 oz Gosling's Black Seal rum and pour it over the ice.
Add cordial
Add 1/2 oz house lime cordial to the glass. This provides balanced sweetness and lime flavor rather than fresh lime juice.
Top with ginger beer
Slowly pour 4 oz ginger beer over the back of a spoon or directly into the glass to preserve some carbonation and create a layered look with the dark rum on top if desired.
Garnish and serve
Give the drink a gentle stir (1–2 strokes) to integrate the cordial without losing effervescence. Garnish with a fresh lime wedge on the rim or squeezed lightly over the top. Serve with a straw if desired.
