    Prepare protein choice

    Choose one protein: bacon, sausage links, turkey patties, or potatoes. If using bacon: place 3 strips in a cold skillet, turn heat to medium, and cook 8–12 minutes, turning occasionally, until crisp to your liking. Transfer to a paper towel‑lined plate. If using pork sausage links: heat a skillet over medium, add 1 tsp oil if needed, cook links 10–12 minutes, turning frequently until browned and cooked through. If using turkey patties: heat 1 tsp oil in a skillet over medium‑high, cook patties 4–5 minutes per side until internal temperature reaches 165°F (74°C). If using breakfast potatoes: heat 1 tbs oil in a skillet over medium‑high, add 1 cup par‑cooked cubed potatoes, season with 1/4 tsp salt and 1/8 tsp pepper, cook 6–8 minutes stirring occasionally until golden and crisp.

    Cook the eggs

    Reduce skillet heat to medium (use a separate nonstick skillet for eggs if you prefer). Add 1 tablespoon butter and let it melt, swirling to coat. Crack 2 eggs into the skillet. For sunny-side-up: cook undisturbed 2–3 minutes until whites set but yolks are runny; season with 1/4 tsp pepper and 1/4 tsp salt. For over‑easy: cook 2 minutes, gently flip, and cook 15–30 seconds more. For scrambled: whisk eggs with a pinch of salt and pepper and cook, stirring, until soft and just set. Remove eggs to a warm plate.

    Keep warm

    If serving immediately, arrange eggs and protein on plate. To keep warm while finishing pancake, cover loosely with foil or place in a low oven (200°F / 95°C).

Buttermilk Flapjack (1 pancake)

    Make batter: in a medium bowl whisk together 3 tablespoons flour, 1 teaspoon sugar, 1/2 teaspoon baking powder, 1/8 teaspoon baking soda and 1/8 teaspoon salt. In a separate small bowl whisk 1/2 cup buttermilk with 1/2 of a large egg (beat an egg and use half; save remainder for another use) and 1/2 tablespoon melted butter. Pour wet into dry and stir gently until just combined — a few small lumps are fine.

    Preheat griddle or nonstick skillet over medium heat. Brush with 1/2 teaspoon oil or a little butter. When surface is hot (a few drops of water should sizzle), pour batter to make one about 6–7 inch pancake (use roughly all batter). Cook until bubbles form and edges look set, about 2–3 minutes. Flip and cook 1–2 minutes more until golden and cooked through.

    Finish and keep warm: transfer pancake to plate and keep warm with eggs/protein or in a low oven briefly. Brush with a little extra butter if desired.

To Serve

    Plate the Tractor Driver Combo: place the buttermilk flapjack on the plate with the two eggs and your chosen protein (bacon, sausage links, turkey patties or potatoes). Drizzle 2 tablespoons maple syrup over the pancake or serve syrup on the side. Offer ketchup or hot sauce for potatoes or patties if desired.
