1. Chill wine to serving temperature
Place the bottle of Mark West Pinot Noir in the refrigerator for 30–45 minutes before serving to reach a target temperature of about 55–60°F (13–16°C). If the wine is already at cellar temperature (around 60–65°F / 15–18°C), chill only briefly (10–15 minutes) so it’s slightly cool but not cold. Use a thermometer if you want to be precise.
2. Open the bottle
Remove the foil capsule from the top of the bottle. Center the corkscrew on the cork and insert it straight down until one spiral remains visible. Carefully pull the cork out using the corkscrew, keeping the bottle upright. Wipe the bottle lip with a clean cloth or napkin to remove any cork debris.
3. Decanting (optional)
If you prefer the wine to breathe or the bottle is slightly aged and has sediment, pour the wine slowly into a decanter in one steady stream until about an inch remains in the bottle. Let it sit in the decanter for 15–30 minutes. For most young Mark West Pinot Noirs, decanting 10–15 minutes is sufficient to open the fruit and aromatics.
4. Pouring
Hold the stem of the wine glass and pour about 4–5 ounces (120–150 ml) of wine into each glass — roughly one-third full to allow room for swirling and to concentrate aromas. Avoid overfilling.
5. Tasting technique
Swirl the wine gently in the glass to release aromas, then take a short sniff to pick up top notes (red fruit, cherry, raspberry). Take a small sip, let it coat your mouth, note acidity, body, and tannin, then swallow or spit depending on your tasting context.
6. Serve with accompaniments (optional)
Arrange the soft cheese, cured charcuterie, crackers or slices of baguette, and fresh berries on a small board or plate. Offer these alongside the poured wine. The soft cheeses and fruit complement the Pinot Noir’s red fruit and subtle earthiness.
7. Storage of opened bottle
If you have leftover wine, reseal the bottle with its original cork (inserted with the stained side in) or use a wine stoppered vacuum. Refrigerate the opened bottle upright; most opened Pinot Noir bottles will stay pleasant for 2–4 days when refrigerated.
