Prepare chicken
Pat chicken breasts dry and place between plastic wrap. Pound to an even 1/2-inch thickness. Lightly season both sides with 1 tsp salt and 1 tsp black pepper.

In a shallow dish, whisk together buttermilk, chopped fresh sage, and optional hot sauce. Submerge the chicken in the buttermilk mixture, cover and refrigerate at least 2 hours or up to overnight for best flavor and tenderness.

About 30 minutes before frying, remove chicken from fridge to come close to room temperature. Pour oil into a heavy skillet or Dutch oven to a depth of about 1 1/2 inches (roughly 3–4 cups depending on pot). Heat oil to 350°F (175°C). Use a thermometer for accuracy.

In a wide shallow bowl, combine flour, cornstarch, garlic powder, onion powder, paprika, cayenne, dried sage, 1.5 tsp salt and 3/4 tsp black pepper. Whisk to aerate and distribute spices.

Remove one piece of chicken from the buttermilk, letting excess drip off. Dredge thoroughly in the flour mixture, pressing so the coating adheres. Shake off excess and set on a wire rack. For extra-crisp crust, double-dredge: dip back briefly into leftover buttermilk and re-dredge in flour mixture.

When oil is at 350°F, gently lower chicken into oil (work in batches so oil temperature stays steady). Fry for 4–6 minutes per side, turning once, until crust is deep golden brown and internal temperature reaches 165°F (74°C). Adjust time for thickness.

Remove chicken to a wire rack set over a sheet pan to drain and rest for 5 minutes. While still hot, lightly dust each breast with 1/2 tsp habanero powder (adjust to taste) for an immediate hit of heat; wear gloves and avoid inhaling the powder.

Habanero Ghost Pepper Aioli

In a small bowl, combine mayonnaise, sour cream, minced garlic, habanero powder (or minced fresh habanero), ghost pepper hot sauce or powder (very small amount), lime juice, honey, 1/4 tsp salt and 1/8 tsp black pepper. Whisk until smooth and taste; adjust heat and sweetness carefully. If too spicy, add more mayo or sour cream to mellow.

Refrigerate aioli at least 15 minutes to allow flavors to meld. Keep refrigerated until ready to assemble.
Assembly & Garnish

Spread a generous tablespoon of habanero ghost pepper aioli on the bottom half of each toasted bun.

Place lettuce leaf (if using) on the aioli, then top with the hot, dusted fried chicken breast.

Add 4 pickle slices over the chicken, then spread a little more aioli on the top bun and close the sandwich.

Serve immediately with lime wedge on the side (squeeze over chicken for a bright finish).
