Huckleberry Syrup

Cook berries
Place 2 cups huckleberries, 1 cup granulated sugar and 1 cup water in a medium saucepan over medium heat. Bring just to a simmer, stirring to dissolve sugar. Once simmering, reduce heat to medium-low and gently bubble for 8–10 minutes, crushing some berries with the back of a spoon to release juices.

Strain & finish
Remove from heat and strain the mixture through a fine-mesh sieve into a bowl, pressing solids to extract as much liquid as possible. Discard solids or reserve for another use. Return the strained juice (about 1 to 1 1/4 cups) to the saucepan.

Thicken
Stir 1 teaspoon cornstarch into 1 tablespoon cold water to make a slurry. Bring the strained juice to a gentle simmer and whisk in the slurry; simmer 1–2 minutes until syrup slightly thickens. Remove from heat and stir in 1 tablespoon fresh lemon juice and 1 teaspoon vanilla extract. Taste and adjust sweetness with a little extra sugar or lemon if needed. Cool to room temperature (about 20–30 minutes) — the syrup will continue to thicken as it cools.
Citrus Ricotta Cream

Combine base
In a medium bowl, beat 1 cup whole-milk ricotta with 2 ounces softened cream cheese until smooth and lump-free, using a whisk or electric mixer on low speed.

Sweeten & lighten
Add 2 tablespoons powdered sugar, 1 teaspoon lemon zest, 1/2 teaspoon vanilla extract and 2 tablespoons heavy cream. Whisk until the mixture is airy but still thick enough to dollop. Taste and adjust sweetness or lemon as desired. Chill briefly if needed to firm slightly (5–10 minutes).

Layer
Spoon about 2 tablespoons of the cooled huckleberry syrup over the cookie layer in each glass (reserve remaining syrup for drizzling). Top with a generous dollop (about 2 tablespoons) of citrus ricotta cream. Repeat with another small sprinkle of syrup if you like more fruit flavor.

Add crunch & garnish
Sprinkle 1/2 tablespoon toasted sliced almonds over each serving. Top each with 2 fresh huckleberries and a small mint leaf. Dust lightly with 1/4 teaspoon confectioners’ sugar if desired.

Chill briefly & serve
Refrigerate assembled glasses for at least 15 minutes to let flavors meld and cookies soften slightly. Serve chilled or at cool room temperature with extra huckleberry syrup on the side for drizzling.
