Make meatloaf mixture
In a large bowl combine ground beef and ground pork. Add the chopped onion, minced garlic, breadcrumb, milk, egg, Worcestershire sauce, salt and pepper. Mix gently with your hands or a spoon until just combined — avoid overmixing.

Form and chill
Shape the mixture into two 3/4-inch thick patties (or one large patty if preferred). Place on a plate and refrigerate for at least 15 minutes to firm up, which helps maintain shape when griddling.

Prepare glaze
In a small bowl mix ketchup and brown sugar until smooth. Set aside.

Griddle meatloaf
Heat a griddle or large nonstick skillet over medium-high heat. Add 1 tablespoon vegetable oil and swirl to coat. Place patties on the hot surface and cook 4–5 minutes per side, pressing gently once after the first minute to ensure even contact. When you flip to the second side, brush the top with half the glaze. Continue cooking until internal temperature reaches 160°F (71°C), about 3–5 more minutes depending on thickness. Brush remaining glaze on finished patties and let rest 2 minutes off heat.

Griddle
Heat griddle or skillet over medium heat and add 1 tablespoon oil or butter. Scoop mashed potatoes into 2 flat patties (about 1/2 cup each) and place on griddle. Press lightly with spatula to form even discs. Cook 3–4 minutes per side until golden and crisp. Keep warm in a low oven (200°F/95°C) while finishing other components.

When meatloaf and potato patties are resting/warm, reduce griddle to medium-low and add 1 tablespoon butter. Crack 2 eggs onto the griddle and cook to order: for sunny-side up cook undisturbed 2–3 minutes until whites set but yolks soft; for over-easy flip after whites set and cook 30–45 seconds more. Season with a pinch (1/8 tsp) salt and a light grind of black pepper.

Plate
Place one griddled meatloaf patty on each plate (or one large patty). Arrange two griddled mashed potato cakes beside it. Add the two eggs on top or to the side of the meatloaf as preferred. Place sliced tomato and biscuit on the plate and add a small scoop (about 1/2 cup) of fresh fruit as garnish.
