Method
For the Kiwi-Watermelon Puree
- 1
Place the chilled watermelon cubes and peeled chopped kiwis into a blender. Add the granulated sugar (if using) and 1 tablespoon fresh lime juice to brighten the flavors.
- 2
Blend on high until completely smooth, about 30–45 seconds. If the puree is very watery, strain through a fine-mesh sieve into a bowl to remove excess pulp for a smoother texture; otherwise keep as-is for a more rustic drink.
- 3
Taste and adjust sweetness or acidity: add up to 1 teaspoon more sugar or 1 teaspoon more lime juice if desired. Refrigerate the puree until ready to assemble the cocktails (can be made up to 24 hours ahead).
For the Lemonade Base
- 4
In a pitcher, combine 1 cup freshly squeezed lemon juice and 2 cups cold water. Stir in 3 tablespoons simple syrup, tasting and adding more if you prefer a sweeter lemonade.
- 5
Add 3 cups of ice to the pitcher to chill the lemonade quickly. Keep the lemonade cold in the fridge if not using immediately.
For the Cocktail
- 6
- 7
In a large mixing pitcher or beverage dispenser, combine 6 oz Deep Eddy Vodka with 2 cups of the kiwi-watermelon puree and 3 cups prepared lemonade. Stir gently to combine. Taste and adjust: add more puree for stronger fruit flavor or more lemonade for a lighter drink.
- 8
Lightly bruise a few mint leaves in your hand (or clap between palms) to release aroma, then add most of them to the pitcher and stir once to integrate. Reserve a few sprigs for garnish.
- 9
- 10
Optional: For a fizzy version, top each poured glass with a splash (about 1–2 oz per glass) of club soda or sparkling water and give a gentle stir.
- 11
Serve immediately. Keeps chilled in the refrigerator for up to 24 hours; flavor may mellow over time—stir before serving.
