Cherry Syrup

Cook cherries into syrup
In a small saucepan combine the pitted cherries, 1/2 cup granulated sugar, 1/4 cup water and 1 teaspoon fresh lime zest. Bring to a gentle simmer over medium heat, stirring occasionally. Simmer until cherries break down and the liquid thickens slightly, about 8–10 minutes.

Strain and cool
Remove from heat. Use a fine-mesh sieve to press the cooked cherries, collecting the syrup into a bowl; press firmly to extract as much liquid as possible. Reserve the solids for another use or chop and add as garnish. Measure out 1/4 cup of the warm cherry syrup to use as the simple syrup component; if syrup is less than 1/4 cup, add a little plain simple syrup (equal parts sugar and water) to reach 1/4 cup. Chill the remaining cherry syrup if not using immediately.

Make limeade
In a pitcher combine 3/4 cup fresh lime juice and 2 cups cold water. Add 1/4 cup of the reserved cherry syrup (or adjusted simple syrup) and stir thoroughly to integrate. Taste and adjust sweetness or acidity: add up to 1–2 tablespoons extra simple syrup if you prefer sweeter, or a tablespoon more lime juice for brighter tang.

Chill
Refrigerate the limeade base for at least 10 minutes if you want it colder before assembly, or proceed immediately to build the drink over ice.

Build the drink
Fill two tall glasses evenly with ice (about 1 cup ice per glass). Pour the limeade base into the glasses, filling each about two-thirds. Top each glass with 1/2 cup chilled club soda (adjust to taste) to add effervescence.

Add cherry layer
Spoon about 1 tablespoon cherry syrup into each glass (or more for a stronger cherry flavor). Gently stir once to create a pretty swirl of cherry color through the limeade.
